I dont know about you, but I am definitely ready for summer already! And with all these juicy, sweet pineapples now available at the market, Im looking for lots of delicious ways to enjoy them.
I love pina coladas, but hate the headache that they can bring on (lets be honest) after more than one. For that reason, I tend to save them for special beach vacations and parties. This smoothie, however, has all the flavor of the traditional poolside drink without the headache.
I found that the best combination for coconut creaminess is the combination of yogurt and coconut milk. Coconut milk is pretty high in calories though, so I only used a tiny bit for that Caribbean flair. When you add fresh pineapple and tiny bit of sweetened flaked coconut to the mix, you have the perfect afternoon treat!
Pineapple Coconut Smoothies

- 1 cup fresh pineapple, chopped
- 1/4 cup coconut milk
- ¼ cup vanilla (or coconut!) flavored yogurt
- 1 tbsp sweetened flaked coconut
- ice

- Serve with additional flaked coconut on top
