Snazzy Blistered Corn Guacamole

I recently came home to the best package I think I ever received: a box of avocados from California. I immediately put them in the fridge and to my shock, they’ve lasted an entire seven days. They’re in beautiful condition, the brightest green I ever did see. I figured some of them needed to find a home so here we are. This guacamole is good. And it’s even better if you blister your corn on an actual grill but I didn’t have the grill going so the gas range was the way for me.

This guacamole is super simple, as guacamole should be. There is some blistered corn, diced jalapeño, vine ripe tomato and lime juice. and of course, salt. This is the perfect guacamole for a bbq or summer gathering. I know your typical guacamole is delicious but this is just a snazzier version that is on the sweeter side, which I actually surprisingly loved.

Blistered Corn Guacamole

    Ingredients

  • 2 ears of corn 
  • 3 avocados, halved and pitted
  • 1/2 jalapeno, diced
  • 1 vine-ripe tomato, diced
  • Juice from 2 limes
  • Salt
  • Chips, for serving

    Directions

  1. Place the ears of corn on the grates of your gas range. Alternatively, you could do this on a grill. Char the corn on all sides, rotating it with a pair of tongs every few minutes. Set aside and allow to cool to room temperature. Then using a knife, slice the kernels off the cob. 
  2. To a bowl, add the avocados and smash, using a fork, until pureed. Fold in the reserved blistered corn kernels, jalapeño, tomato, lime juice and a few pinches of salt. Give it a taste and adjust the salt according to taste. Serve with chips. 

Yield: Serves 4
