For the past couple of weeks I’ve been making popsicles over and over. It’s been warm this entire month (hi Summer) and it’s made me super happy to have these in the fridge waiting for me whenever I want something cold and delicious.
I know most popsicles are seen as more of a dessert but these are on the healthier side, if I might add. Yes, they’re sweet because of the honey but I like to think of them as a more healthy version of a fudgesicle. I’ve eaten them as more of a protein kinda snack. The cashew butter makes them have a nutty undertone and the cocoa powder makes it’s nice and chocolatey. I also love that these are super easy to make; all the ingredients go in a blender and that’s it!
Cashew Chocolate Fudgesicles
While most popsicles are seen as a dessert, these cashew chocolate fudgesicles are on the healthier side. The cashew butter makes them have a nutty undertone and the cocoa powder makes them chocolatey. (Recipe Credit: Adrianna Adarme of Fresh Tastes)
- 1 (13.5) can of full-fat coconut milk
- 1/3 cup cashew butter
- 1/3 cup cocoa powder
- 1/3 cup honey
- Pinch of salt
Ingredients
- To a blender, add the coconut milk, cashew butter, cocoa powder, honey and salt. Blend until pureed and smooth. Transfer to popsicles molds and add popsicle sticks. Freeze for at least 5 hours, ideally overnight.
- Gently remove popsicles from their mold.
