Brew Mexican Coffee with an Added Kick

On a recent trip to Los Cabos, Mexico, I experienced one of the most delicious cocktails of my coffee-obsessed life: Mexican Coffee.

Now, I’m sure there are a million and one different variations of this boozy hot beverage, but this is the exact one that was brought to me—get this—ON FIRE to my dinner table at a local restaurant in Cabo. The server made a wonderful presentation out of lighting the alcohol on fire before pouring strong coffee and melted ice cream over top. It was quite the experience to say the least!

So to make this, you need to get yourself some good quality coffee and brew it strong!

You’ll also need the other two star players: Tequila and Kalhua. I never knew the two would go together so well!

You also need melted vanilla ice cream. I do this by scooping some out into a glass bowl and zapping it in the microwave for thirty seconds. It makes for the perfect sweet finish.

Next time I make this, I’ll serve it in a martini glass—I think it would be perfect for company!

You could also cool things down by serving this cocktail over ice instead. Either way, I bet you’ll be hooked after the first sip!

    Ingredients

  • ½ oz tequila
  • ½ oz kahlua
  • 1 cup strong brewed coffee
  • ¼-1/3 cup melted vanilla ice cream

    Directions

  1. Melt vanilla ice cream in microwave for 30 seconds
  2. Combine all ingredients and serve immediately.

Yield: 1 serving
