I have very surprisingly stuck to eating healthy-ish this year. I know, I know, Ive even shocked myself because usually by March, Ive jumped off the eating healthy-bandwagon and am back to my old ways. One thing that has helped me is only eating fun foods on the weekends. During the week, I try and stick to clean, healthy eating.
My favorite go-to is lettuce wraps and these are a tasty version. I also love it because this is super fast to put together.
Its spicy, flavorful and the savoriness of the sauce makes the entire thing satisfying. One of my favorite things about a dish like this is that Im not hungry an hour after eating it. This always seems to happen when I try and stick to eating healthysad face!
Spicy Soy Chicken Lettuce Wraps
These chicken lettuce wraps are spicy, flavorful and the savoriness of the sauce makes the entire thing satisfying. (Recipe Credit: Adrianna Adarme of Fresh Tastes)
- 1 teaspoon sesame oil
- 2 boneless and skinless chicken breasts, diced
- 2 garlic cloves, minced
- 3 tablespoons soy sauce or tamari
- 1 teaspoon fresh grated ginger
- 1/2 teaspoon Sriracha, plus more for topping
- 2 teaspoons sesame seeds
- 1 tablespoon crushed peanuts
- 8 to 10 lettuce leaves, of choice
Ingredients
- In a medium sauté pan, set over medium heat, add the sesame oil. When hot, add the chicken; cook for 5 to 7 minutes, until mostly cooked. Mix in the garlic, soy sauce or tamari, ginger, Sriracha and sesame seeds. Cook for 2 to 3 minutes longer until it’s fragrant. Add in the crushed peanuts.
- Spoon the chicken mixture into the center of lettuce leaves and top garnish with sesame seeds and a squeeze of Sriracha.
