Baked Sweet Potatoes

Ingredients

  • 3-6 sweet potatoes
  • 2-4 Tbsp. butter to taste
  • 2-4 Tbsp. pure maple syrup to taste (optional)
  • 1/4 cup pecans toasted, if desired, and chopped (optional)

Instructions

  1. Preheat the oven to 450 degrees.  Line a baking sheet with aluminum foil.  Place the potatoes on the baking sheet and bake them for 45 - 50 minutes until they are very tender.  (Alternatively, you can microwave the potatoes for 10-15 minutes until they are soft, turning them every five minutes.) Split the potatoes lengthwise and mash in desired toppings (we like a little butter or margarine, maple syrup and chopped pecans).
