Buttermilk Griddle Cakes

Ingredients
- 1 cup buttermilk
- ½ cup sweet cream
- 1 egg, well beaten
- 2 tbsp cornmeal
- 1 tbsp butter, melted
- 1 tsp baking soda
- ½ tsp salt
- 2 cups flour
- Butter and maple syrup for topping
Instructions

Mix ingredients in order given (excluding topping butter and maple syrup). Drop by spoonfuls on a greased hot griddle.

Cook on one side and when puffed, full of bubbles and well cooked on edges, turn and cook on other side. Serve with butter and maple syrup.
