Chocolate Anise Biscotti (Biscotti al Cioccolato con Anice)

Sometimes that after dinner coffee just needs an accompaniment, and what could be a more perfect finish to a meal than these chocolatey treats with almonds and that hint of anise? Biscotti comes from the Latin biscoctus, meaning twice baked or cooked. This recipe (twice as delicious) is featured in the Homegrown Heroes episode of Lidia Celebrates America.

    Ingredients

  • 2 ½ cups all-purpose flour
  • 3 tablespoons natural unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground aniseed
  • ¼ teaspoon kosher salt
  • ½ stick (4 tablespoons) unsalted butter, at room temperature
  • 1 cup sugar
  • 3 large eggs, plus 1 egg yolk
  • ½ teaspoon anise extract, or 1 tablespoon sambuca or other anise liqueur
  • Finely grated zest of 1 small orange
  • ½ cup slivered almonds

    Directions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. On another piece of parchment, sift together the flour, cocoa, baking powder, baking soda, aniseed, and salt. In a mixer fitted with the paddle attachment, beat the butter and sugar until smooth. Add the eggs and yolk at medium speed, one at a time, beating well to combine the mixture. Beat in the anise extract or sambuca and the orange zest. Add the dry ingredients, and mix to form a smooth dough. Add the almonds, and mix just to combine. Chill the dough in the refrigerator for 15 minutes.
  2. Divide the dough in half, and form into two flattish 12-inch logs, about 3 inches apart, on the baking sheet. (If the dough is too sticky, dust it and your hands with flour.) Bake until the logs are puffed and cooked through but not colored, about 25 minutes. Remove from the oven, and carefully place the logs on a cooling rack. Decrease the oven temperature to 325 degrees.
  3. Let the logs cool until you can handle them but they are still soft, about 10 minutes. With a serrated knife, cut the logs on a slight bias into ½-inch-thick biscotti. Arrange these on the baking sheet so they aren’t touching, and bake them until crisp on the top, about 10 minutes. Flip the biscotti and bake until the other side is crisp, about 10 to 15 minutes more. Cool them completely on baking racks.
