Ingredients
- 60 grape leaves (typically 1 jar)
- ½ cup short grain rice
- 1 lb ground beef
- 1 cup Greek olive oil
- 1 yellow onions finely chopped
- 3 spearmint leaves
- 2 tablespoons fresh dill chopped
- 1 teaspoon dried Greek Oregano
- Water to cover/submerge rolled up leaves
- 3 lemons
- 2 egg yolks
- 1 tablespoon flour
- ½ cup fresh parsley chopped
- Salt and pepper
Instructions

Remove stems from leaves (if on), rinse once & let sit in water for ~10 minutes. Rinse rice at least once.

Heat medium stock pot over med heat add ⅓ cup Greek olive oil, add chopped onions & sauté until translucent.

Add ground beef and break apart w/ spatula until brown, add diced spearmint leaves, dill, oregano about half way through, season with salt and pepper.

Remove from stove and cool as much as can, put into large bowl.

Layer bottom of the pot that the meat/rice mixture was in with leaves.

Place leaf vein side up and fill with spoonful of filling, fold & roll leaves.

Place stuffed leaf, folded side down in pot and fill.

Drizzle Greek olive oil, juice of 1 lemon over pot and add salt and pepper.

Put plate upside down to keep them in place and fill with water to cover stuffed leaves.

Cover, boil, once boils bring down to simmer for 30-40min or until water is mostly gone.
