Ingredients
- 1 jalapeno pepper seeded and cut into chunks
- 1 ½ pounds tomatoes peeled seeded and cut into chunks
- 2 cucumbers peeled seeded and cut into chunks
- 3 stalks celery cut into chunks
- 1 green pepper cut into chunks
- 1 yellow pepper cut into chunks
- 1 medium onion cut into chunks
- 2 cloves of garlic cut into chunks
- 1/2 bunch cilantro
- Tabasco sauce to taste
- 1 quart tomato juice
- 1/4 cup olive oil
- 1/4 cup chicken stock
- 1/4 cup balsamic vinegar
- 1 ½ teaspoon sugar
- 1 ½ teaspoon salt
Directions
- Process ingredients in batches in the work bowl of a food processor, or in any large bowl with a hand-held blender
- Process until coarse.
- Serve chilled with a dollop of sour cream and chopped cilantro to garnish.
