Ingredients

For the Tomato Beef

  • 1/3 cup oil
  • 1 tbs whole cumin
  • 1 tbs whole fennel
  • 4-6 whole black pepper cloves
  • 1 tbs ginger garlic paste
  • 2.5 pounds beef/stew meat (meat should be cut into small pieces)
  • 2 small tomatoes
  • 8 oz tomato sauce
  • 2 tbs red chili powder
  • 2 tbs crushed coriander
  • 1/2 cup of full fat yogurt (not Greek yogurt)

For the Khurry/Khadi

  • 1 tsp salt
  • 1/2 tsp ground turmeric
  • 1 tsp ground garam masala
  • 1 tsp ginger garlic paste
  • 1 big jalapeño (or 2 small ones)
  • 4 heaping tablespoons of gram/besan flour
  • 1 cup of full fat yogurt (not Greek yogurt)
  • 2 -3 cups of water
  • 1 tablespoon fenugreek seeds

For the Assembly

  • 1 pound of spaghetti (cooked)
  • Lemon
  • Chopped cilantro
  • Fried onions, home fired or bag
  • Chaat masala
  • Crushed potato chips (sour cream and onion flavor)

Instructions

  1. Make the Tomato Beef: Cut beef into small pieces the size of a large quarter.
  2. Add 1/2 of the oil into the pan, toast ginger garlic paste, black pepper, cumin, and fennel for 30 seconds.
  3. Add beef and combine. Let it cook together at medium heat for 10 minutes.
  4. After 10 minutes, add the remaining oil, tomatoes, chili powder, and crushed coriander. Adjust spice as needed.
  5. Add a 1/2 cup of water to submerge most of the meat pieces. Let it cook at medium low heat for 15 minutes.
  6. Add yogurt and tomato sauce and let it cook for 30-45 minutes or until tender. You want to easily break the meat with your hands.
  7. The dish should have a thick gravy but should be more meat than gravy.
  8. Make the Khurry/Khadi: Put all of that in a blender and blend. Put two cups of water and blend again.
  9. In a pot, put about half cup of oil to warm up. In that, put one teaspoon of fenugreek seeds.
  10. When oil is warm and fenugreek seeds starts to crackle, pour the blender mixture on top (have the cover ready so you can cover right away).
  11. Mix it, wait for it to come to a boil, and put on low heat and let it cook. Then check the thickness and add water to adjust thickness to your liking (typically like a cup and half to thin it a bit).
  12. Let it simmer for another 10 minutes after putting in water and it’s done.
  13. Assemble the dish: Break in half and boil one pound of spaghetti with a little bit of oil. Overcook it by 3-4 minutes. It should be soft.
  14. To serve, let everyone assemble the bowl as they like.
  15. My recommendation: In a bowl, add a serving of spaghetti. Top it with a ladle of Khurry and add the tomato beef. Top it off with a squeeze of lemon, cilantro, fried onions, chaat masala, and crushed potato chips.
