Ingredients
- 2 pork tenderloins
- 4 ounces pancetta sliced thin
- 2 sprigs rosemary
- 2 sprigs sage
- 1 teaspoon garlic
- 1 teaspoon parsley
- 1 cup white wine
- 1 cup demi glace
- 1 tbl olive oil
- salt and pepper
Directions
- Lay pork tenderloins on cutting board with 1 sprig of rosemary and sage on each
- Wrap with thinly sliced pancetta
- Heat oil in large saute pan, brown tenderloins on all sides and finish in 400 degree oven and cook until medium.
- Remove tenderloins to clean table
- Place saute pan on medium heat
- Add garlic and parsley
- Add white wine and simmer by half
- Add demi glace
- Season with salt and pepper
- Slice tenderloins, arrange on plate, top with sauce
