Motsiyas Recipe | PBS Food

    Ingredients

  • 1 Lb Ground Chicken
  • 3 Tbsp Garlic, minced
  • 1 cup Onion (diced small)
  • 1/2 bunch Mint (torn)
  • 1 tsp Fish Sauce
  • 1 Tbsp Oyster Sauce
  • Salt + Pepper to taste
  • Banana Leaf (found at Asian Markets)
  • Butcher's Twine
  • 1 Can Coconut Milk
  • 1 Tbsp Sesame Seeds

    Directions

  1. Combine ground chicken, garlic, onion, mint, fish sauce, oyster sauce, salt, and pepper and mix well until all ingredients are incorporated.
  2. Cut Banana Leaf into a rectangle about 4"x6".
  3. Add 1/2 cup of the chicken mixture onto Banana Leaf and shape into sausage form.
  4. Roll sausage in the leaf until completely enclosed, remove excess banana leaf with a knife.
  5. Tie ends of banana leaf with butcher's twine. Remove excess leaf at both ends with a knife or kitchen scissors.
  6. Heat one can of coconut milk to a simmer in a pan.
  7. Add Motsiyas to coconut milk and steam for about 10 minutes.
  8. Remove Motsiyas from coconut milk and continue to reduce until coconut curd forms.
  9. While coconut milk reduces open the Motsiyas by making a 1/2 inch cut on both sides inside of the butcher's twine.
  10. Peel away top half of banana leaf. Garnish with coconut curds.
