Ingredients
- 8 graham cracker squares, finely ground
- 1/4 cup raisins
- 1/4 cup smooth peanut butter
- 2 tablespoons plus 2 teaspoons honey
- 4 teaspoons unsweetened coconut
Directions
- Combine ground graham crackers, raisins, honey and peanut butter in large mixing bowl.
- Roll dough into 16 balls.
- Pat to flatten.
- Press tops of cookies lightly in coconut.
Tips/Techniques
Grind graham crackers in food processor or blender. Children can place the 8 graham cracker squares in a large zip-top bag. Seal well. Roll over the crackers with a rolling pin until very fine crumbs are formed. Chocolate chips are a great substitute for raisins. Any dried fruit can be used as well.
