Oatmeal Coconut Cookies

- 1/2 cup plus unsalted butter (1 stick)
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1 teaspoon almond extract
- 3/4 cup flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup quick cooking oats
- 1/2 cup sweetened shredded coconut
Instructions

Preheat the oven to 350 degrees F. Using an electric hand or stand mixer, cream the butter, brown sugar, and sugar until light and fluffy. Add the egg and almond extract until well combined followed by the flour, baking powder, baking soda, and salt. Add the oats and coconut. Mix the dough until it comes together. If the dough seems crumbly, continue to mix it until the dough is workable. Lay a piece of foil on a baking sheet and lightly spray it with non stick coating. Using a medium cookie scoop, scoop dough into 18 mounds. Bake cookies for 12-14 minutes until the edges are golden brown. Transfer to a wire rack to cool.
