Ingredients

  • 4 ounces plus 1 tablespoon unsalted butter
  • 3 sheets homemade lavash or two sheets purchased lavash
  • 1 cup finely diced yellow onion
  • 2 cups shredded and chopped string cheese
  • 2 cups hot water

Instructions

  1. Preheat oven to 450° F. Butter two 6-inch wide ovenproof bowls or ramekins (or use one 9-inch pie tin).
  2. Cut the lavash into 1-inch squares until you have 4 cups. Cut the remaining lavash into two 6-inch squares (these will go on top of each bowl).
  3. In a medium saucepan over medium-high heat, melt 4 ounces of butter. Add the onions and sauté until they're soft but haven't started to brown, about 4 minutes. Remove the pot from the heat.
  4. To assemble the panrkhash: In each bowl, layer lavash squares and cheese in two layers, starting with lavash and ending with cheese. Top each bowl with half of the onion butter mixture and pour 1 cup of hot water over the top. Top each bowl with 1 lavash square and dot each square with the remaining butter.
  5. Bake until the tops of the lavash squares are golden brown and the cheese is bubbling and melted, 10 to 15 minutes.
