Planked Molasses Salmon

My husband made this dish on our very first date, so you know it will impress your guests or family on a special evening! Light salmon is coated with a molasses glaze to make a dish that beautifully blends contrasting flavors: sweet and savory, smoky and fresh. This dish will exceed your expectations and surprise you.

Ingredients
- 4 zucchinis, sliced lengthwise
- 2 tablespoons olive oil, divided
- 2 pinches sea salt
- 1½ pounds king salmon fillets
- 3 tablespoons molasses
- 2 tablespoons brown sugar
- 2 garlic cloves, minced
- 2 lemons, 1 thinly sliced and 1 cut into wedges

Soak a large cedar plank in water for at least 30 minutes (see note).

Drain and pat dry. Line a baking sheet with foil.

Preheat the oven to 525 degrees or high broil with a rack in the lowest position.

Put the zucchini slices in a large bowl. Add 1 tablespoon of the olive oil and a pinch of salt and toss well. Let sit while you prepare the salmon.

Place the salmon on the plank and set the plank on the prepared baking sheet. In a small bowl, mix the remaining 1 tablespoon olive oil, molasses, brown sugar, garlic, and a pinch of salt and combine well. Smear the mixture over the top of the salmon fillets. Place the lemon slices on top of the molasses mixture.

Roast the salmon on the lowest rack for 8–10 minutes, or until the center of the salmon flakes easily with a fork. Remove from the oven and let rest while you make the zucchini.

Place the zucchini on a grill pan over medium-high heat and sear for 2–3 minutes on each side.

Serve the salmon with the zucchini, garnished with lemon wedges.
