Sliders with Onion Rings

Ingredients
- 1 ½ packages Hawaiian rolls (18 rolls total but leave uncut/unseparated)
- ¾ teaspoon garlic powder
- 3 sweet onions
- 1 ½ lbs ground sirloin
- 3 tablespoons yellow mustard
- 4 medium dill pickles, diced
- 12 slices yellow American cheese sliced med-thin
- Yellow mustard
- Salt & pepper
For the onion rings:
- 2 sweet onions
- ½ cup flower
- 1 T baking powder
- 1 T smoke paprika
- 1 egg
- ¾ milk
- 1 T Pepper
- 1 T Salt
- Bread crumbs
Instructions

Dice onions and add 3 teaspoons salt.

Strain onions and keep onion juice for later.

Take 1/2 of ground sirloin and spread out in sheet pan lined with parchment paper.

Use a rolling pin to spread out meat into flat and even thickness.

Spread thin layer of yellow mustard and season with salt, pepper & garlic powder.

Fold meat over itself so that mustard & seasons are on inside.

Put in large freezer bag.

Use butter knife on outside of bag to create 8 sliders (so they aren’t cut through since you are on the outside of the bag but it’s broken them apart for when they come out of the freezer).

Place bag in freezer for 5 minutes to firm up.

Repeat with other half of meat mixture at the same time.

Preheat griddle top to 350 degrees.

Spread onions onto grill the same size as the footprint of the meat in the zip top bag.

Remove meat from zip top bag and place over onions.

Pour onion juice over meat as it starts to cook.

Add cheese to cover meat.

Add tops of buns over cheese.

Steam burgers for a few minutes.

Pick up burgers in groups with large spatula and place on bottom buns on platter.

For the Onion Rings: Cut onion into approx 1/4” rings.

Combine flour, baking powder, salt & paprika in a mixing bowl.

Coat each ring in flour mixture.

Once coated, take remaining flour mixture and add milk, egg, salt & beat until no lumps.

Coat each ring in new wet mixture.

Coat in bread crumbs.

Fry in fryer.
