Slow-Cooker Boston Baked Beans

Ingredients

  • ½ pound bacon
  • 1 medium onion, chopped
  • Two 28-ounce cans pork and beans
  • 1/2 cup BBQ sauce
  • ¼ cup molasses
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons brown sugar
  • 1½ tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Cut the raw bacon into small pieces and fry until half way cooked. Using a paper towel, soak up all but 2 tablespoons of the rendered fat and discard.
  2. Add the onions to the pan and continue to cook for 5 minutes.
  3. Transfer the bacon and onions to a slow cooker. Mix in the BBQ sauce,molasses,  cider vinegar, Dijon mustard, Worcestershire sauce, salt, and pepper. Cover the slow-cooker with the lid and cook on low for 6 hours stirring occasionally to make sure the beans on the bottom do not burn.
