Yield: 4 servings
Ingredients
- chicken, either 4 breasts or equivalent pieces - adjust cooking time up if chicken has bones
- seasoned flour: Frankenmuth chicken seasoning
- meatless spaghetti sauce
- onion, cut up
- optional green pepper and garlic depending on spaghetti sauce being used
- olive oil and butter
Directions
- Rinse chicken in cold water and shake off water
- Dredge chicken in seasoned flour
- Brown chicken in cast iron fry pan in butter/olive oil
- Remove chicken
- Saute onion in same pan (you can also saute green pepper and additional garlic at this point if desired)
- Add back in chicken then pour spaghetti sauce over chicken
- Cover, simmer until chicken is done cooking (1/2 hour)
- Serve atop warm al dente spaghetti
- crush basil over the top for appearance
- Don't forget the shredded parmesan along side
- Serve with fresh side salad and garlic toast
