Sweet Potato Pie with Yams

Ingredients
- 2 eggs and one yolk lightly beaten
- 2 cups pureed yams
- 3/4 cups sugar
- 1/2 teaspoon ginger
- 1/2 teaspoon salt
- 1/4 tsp cloves
- 1 cup 2% milk
- 2/3 cups light cream
- 2 teaspoons melted butter
- 1 cup flour
- 1/2 teaspoon salt
- 1/3 cup shortening
- 3-4 TBS cold water
- 1-2 TBS ground pecans
Instructions

Cut the shortening into the flour and salt. Gradually sprinkle on the cold water until flour is moistened and the dough cleans the side of the bowl. Gather into a ball, flatten and chill for 15 minutes.

Roll out and fit into a 9-10" pie pan. Sprinkle the bottom with ground pecans.

Mix together the filling ingredients, pour into the prepared crust and bake at 425° for 15 minutes. Lower to 350° and bake for an additional 40-45 minutes.
