Tom Farley’s Favorite Meal

So when I do cook, I keep it simple - too simple to call it a recipe. Here’s a meal that I do on weekends, because I can get just about everything at the Saturday farmer’s market. "- Tim Farley

    Ingredients

  • 1 small to medium-sized piece of flounder
  • 1 sweet potato
  • 1 head of lettuce (whatever is fresh)
  • 1-2 tomatoes
  • 1 red pepper
  • 1 cucumber
  • lemon juice
  • olive oil, vinegar and spicy mustard (to taste)
  • 1 sourdough bread

    Directions

  1. Cover the flounder in flour, sprinkle with pepper and paprika and then pan-fry in butter. Squeeze lemon juice on top.
  2. Microwave the sweet potato until it’s soft (times may vary according to your microwave)
  3. Mix lettuce, tomatoes, red peppers, cukes, and whatever else looks good. Toss with a dressing of olive oil, vinegar, and spicy mustard.
  4. Serve with lots of bread!
