I was late to the pumpkin party. It took me years to try pumpkin pie. (I felt unfaithful to its sweet potato sibling.) But after that first bite, all of my pumpkin paranoia was squashed. I couldn't be happier. Not only are pumpkins loaded with antioxidants, fiber and other nutrients, their seeds offer health benefits, too. But let's get to my real motivation for writing this post.
