Like many food trends of the past, kale's reign as the trendiest vegetable must also come to an end. Kale seems to already have a successor that is quite the opposite from its dark, leafy, and hearty attributes. Who is it? None other than cauliflower, which seems to be the new popular vegetable as showcased by countless Pinterest pins, magazines, and in cookbooks featured across the culinary section at my local bookstore.
Unlike kale, cauliflower's versatility allows it to transform itself into healthier versions of comfort food favorites such as cauliflower mac and cheese, faux mashed potatoes, and cauliflower pizza crust. Cauliflower has earned its place as an always-must-have vegetable in our refrigerator. It is one of my kid's favorite vegetables too; especially roasted and seasoned with East Indian spices.
I'm still learning how to use cauliflower in non-traditional ways. For months I've been reading about cauliflower pizza crust with curiosity and interest even though Im unapologetically a pizza crust purist. I have wanted to understand this viral craze that has been sweeping the internet the past year. What has added to my curiosity is my recent effort to make healthier versions of certain types of foods my family loves to eat.
Today's recipe for Cheesy Pesto Cauliflower Flat Bread is inspired by my pursuit of healthier comfort foods. The flatbread is made from cauliflower, pesto, egg white, cheese, and salt. It will in no way fool anyone into believing it's chewy glutinous bread. However, it will easily convince you that its not cauliflower. In fact, it does a wonderful and convincing job being a bread substitute that's still very enjoyable and deceptively good at not tasting like cauliflower. If you're a skeptic like I've been, this recipe may be the one that can win you over to the new cauliflower craze. Enjoy!
