Chocolate Egg Nests

One of my most fond Easter memories is of our neighbor, Alice, insisting we accept her homemade baked goods and treats, which often included candy. My favorite candy she made was her chocolate nests made from chocolate-covered Corn Flakes cereal. The chocolatey flakes were spooned into mounds with jelly beans cuddled in the center. I remember thinking about how clever Alice was, and that the chocolate nests were almost too cute to eat.
In our family, we celebrate Easter with a large potluck brunch and an Easter egg hunt for the kids. Our family makes all sorts of Spring treats, including chocolate egg nests. One difference from the ones Alice made is that our egg nests are made with All-Bran cereal because I think they look more realistic than other adaptations like crunchy Chow Mein noodle toppings, pretzel sticks, or coconut. I have yet to meet a person who has figured out what my egg nests are made from because when you bite into them they just taste like a chocolate candy bar with lots of crunchy bits. I'm not a big fan of sneaking healthy foods into dishes for the sake of sneaking in healthy food. However, I will say I am rather proud these nests are high in fiber. My son Eli loves to make these with me and can do most of the steps himself with a little help from me.
