Most nights I have to keep things simple when I cook at home for my family, especially on a busy weeknight when I can't seem to catch a breath between driving my kids to sports practices or to a friend's house.
In my mind, I know I have to feed everyone but sometimes getting dinner to on table is stressful. Like I-want-to-pull-out-all-of-my-hair stressful. I love pasta dishes because they typically take under 10 minutes to cook the pasta and you can throw in any other vegetables or meats you want. This penne pasta recipe I'm sharing with you today is one of my favorites. I often make it when I'm in a hurry. I also like to add other ingredients like shrimp, chicken, zucchini, and asparagus. Made with fresh spinach and thick bacon crumbles (two of my most favorite ingredients) you can easily make this for your family in under 20 minutes from start to finish - you got to love that! Enjoy!
