Chicken Chapli Kebabs with Yogurt Mint Sauce

Ingredients

  • 1½ pounds ground chicken
  • 1 small yellow onion, roughly chopped
  • 5 garlic cloves, peeled
  • ½-inch piece ginger
  • 3 green chiles
  • 1 tomato, roughly chopped
  • ¼ cup roughly chopped fresh mint
  • ¼ cup roughly chopped fresh cilantro
  • 3 tablespoons pomegranate molasses
  • 2 tablespoons ground cumin
  • 4 teaspoons salt
  • 4 teaspoons ground black pepper
  • 1 tablespoon garam masala
  • 1 tablespoon fennel seeds
  • 1 teaspoon coriander seeds
  • 3 tablespoons chickpea flour (besan)
  • 1 large egg, beaten
  • 2 tablespoons vegetable oil

For the Yogurt Mint Sauce:

  • 1 cup plain yogurt
  • Juice of 1 lemon
  • ¼ cup fresh cilantro
  • ½ cup fresh mint
  • ½ cucumber
  • 1 green chile
  • Salt and ground black pepper to taste

Instructions

  1. In a food processor, combine all the ingredients except the oil and pulse until just combined.
  2. Form the mixture into 10 small patties, place on a plate, and refrigerate for 10 minutes.
  3. Heat the oil in a large skillet over medium-high heat. Working in batches, fry the patties until cooked through, 5–8 minutes per side. Transfer the cooked patties to a wire rack to drain.
  4. Serve with the yogurt mint sauce.
  5. For the Mint Sauce: Combine all the ingredients in a small food processor and blend until smooth.
