Fried Plantains

One of the things that makes plantain so great is how versatile it is. It can be fried, boiled, baked, or mashed. It can be eaten for breakfast, lunch, dinner, or even a snack. It can be as sweet as a dessert or as savory as a potato pancake; it all depends on how ripe the plantain is or isn’t. To make sweet plantains, you want to make sure you choose plantains that are yellow with some black spots on them. The deeper the shade of yellow and the more black spots there are on the peel, the sweeter the plantain will be. This recipe (and I hesitate to call it a recipe because the plantain really does all of the work) is my favorite way to have plantain.

Ingredients

  • Vegetable oil, for frying
  • 2 medium ripe plantains, peeled and cut on the diagonal into ½-inch-thick slices
  • Salt to taste

Instructions

  1. Pour enough oil into a large skillet to heavily coat the bottom of the pan. Heat the oil over medium-high heat. Working in batches, add the plantain slices to the hot oil. Fry for 2–3 minutes on each side, depending on the desired crispiness. Transfer to a paper towel–lined plate. Season with salt and serve immediately.
