Green Beans with Mint Pesto (Fagiolini con Pesto Alla Menta)

Ingredients

  • 1 ½ teaspoons kosher salt, plus more for the cooking water
  • 2 pounds green beans, trimmed
  • 1 cup loosely packed fresh mint leaves
  • 1 cup loosely packed parsley leaves
  • ½ cup toasted pine nuts
  • 6 tablespoons extra-virgin olive oil
  • ½ up freshly grated Grana Padano

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the green beans, and cook until very tender, about 6 to 8 minutes, depending on size.
  3. Meanwhile, in a mini-food processor (or in a bowl, if you are working by hand), combine the mint, parsley, pine nuts, and salt, and pulse to make a coarse paste.
  4. With them machine running, add the olive oil to make a smooth pesto.
  5. Scrape the pesto in a serving bowl, and stir in the grated cheese.
  6. When the beans are ready, drain well and add to the bowl with the pesto.
  7. Toss well, season with salt if necessary, and serve.
