Avocado Sesame Toast

- 2 slices toasted bread
- 2 tablespoons tahini, well stirred
- 2 teaspoon lemon juice
- ¼ teaspoon salt
- ¼ teaspoon dried thyme
- 1 avocado
- Olive oil (optional)
- Black pepper
- Sumac (optional)

Toast your bread.

Add the tahini, lemon juice and salt to a small bowl. Put the dried thyme in the palm of one hand and use your other thumb to rub the leaves until they crumble into a powder before adding it to the bowl. Stir the ingredients together until they're well combined and the mixture thickens into a spreadable consistency.

Peel the avocado and cut the avocado in half around the pit. Twist the two halves to separate one half from the pit. For the half with the pit, gently tap the blade into the pit, and then twist the the knife to dislodge the pit. Peel both halves of avocado and then slice them as thinly as possible lengthwise. Squeeze a bit of lemon juice on the avocados to keep the from turning brown.

Spread half the tahini mixture onto each slice of toasted bread. Fan half an avocado onto each slice of toast and then drizzle with olive oil. Sprinkle with salt, pepper and sumac to taste.
