Ingredients

Main Ingredients

  • 2 cups chickpeas, cooked
  • ½ cup tahini
  • 1 cup plain yogurt
  • Pita bread, cut in small squares or unsalted pita chips
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon cumin

For Garnish

  • 2 tablespoons of pine nuts
  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped parsley
  • 2 tablespoons of chopped tomatoes (optional)
  • 2 tablespoons of pomegranates (optional)
  • ½ teaspoon of ground cumin

Instructions

  1. To Make the Sauce: Mix the chickpeas, yogurt, tahini, crushed garlic, lemon juice, cumin, and salt. Blend all the ingredients together until you get a smooth dip. If it gets thick, add some chickpea water/broth.
  2. To Assemble the Fatteh: Bake your pita bread pieces in the oven until golden and crispy.
  3. Toast 2 tablespoons pine nuts with warm olive oil or melted aged butter in a pan until golden. Set aside.
  4. Spread pita bread in a deep bowl. Add chickpeas and some chickpea water to soften the bread.
  5. Spread a layer of the sauce on top.
  6. Garnish with chopped parsley, chopped tomato, toasted pine nuts, pomegranates, and cumin.
