Mulled Wine

This warm, spicy drink is the smell of Christmas, a pan simmering away in the kitchen gives you all the festive aromas! If you wish, tie the star anise, cinnamon and bay leaves into a little muslin bag and float in the liquid – this will make it easy to serve and no need to strain.

Ingredients
- 2 lemons
- 1 large orange
- 4 satsumas or clementines
- 1 bottle (25.4oz) of red wine
- ⅔ cup Scotch whisky or whisky liqueur
- 2.5 cups water
- 6 star anise
- 2 cinnamon sticks
- 2 bay leaves
- ½ cup caster sugar

Peel the zest very thinly from the lemons, orange and 2 of the satsumas or clementines, and squeeze their juice. Thinly slice the remaining two clementines and keep for decoration.

Pour the wine, whisky and 2.5 cups water into a large pan, add citrus peel and juices, star anise, cinnamon sticks and bay leaves. Stir in the sugar to taste. Bring to simmering point, cover and keep at simmering for about an hour.

Remove the bay and cinnamon and serve hot with the reserved clementine slices floating on the top.
