Sweet Potato and Celery Root Slaw

It's great to have a slaw over the festive season to go with cold meats and leftovers. Using in-season root vegetables gives this a nice change from the classic. Keeps for 2 days.

Ingredients
- 8 oz peeled celery root, sliced into very thin matchsticks
- 2 large celery sticks, very thinly sliced
- 8 oz peeled sweet potato, sliced into very thin matchsticks
- ½ red onions, thinly sliced
- 1 lime, finely grated zest and juice
- 1 tbsp white wine vinegar
- Generous teaspoon honey
- 2 tbsp grainy mustard
- 4 tbsp sunflower oil
- ¼ cup dried cranberries, roughly chopped
Instructions

Mix the lime juice & zest, vinegar, honey and mustard together in a large bowl, gradually whisk in the oil. Put the celery root, celery, sweet potato and onion into the bowl and mix together.

Chill in the fridge, season with salt and pepper and scatter with cranberries just before serving.
