Strawberries and Cream Crepes

I'm a big proponent of sleeping in uninterrupted on Mother's Day. It is one of the greatest gifts my family can give me. No fighting my brain and body to get up out of bed, but instead just sink myself deeper into my mattress and allow my brain to transport me to dreamland. My husband and kids know this and I love waking up when I'm ready versus when I have to. Does anyone else feel the same way? My kids also work really hard on making a memorable breakfast which I am always touched by even when it doesn't turn out quite how they imagined - it's always perfect to me!
Today I'm sharing my wonderful Strawberries and Cream Crepes recipe that can be easily pulled together yet plated very beautifully. Anyone who eats it will feel pampered and special which makes preparing this dish for Mother's Day a must! The crepe batter is made in a blender and the filling is made of macerated strawberries (strawberries tossed in a little sugar to release their juices and natural sugar), sweetened whipped cream, and a light drizzle of chocolate hazelnut sauce. It is the perfect breakfast-in-bed recipe!
Aside from the recipe, my daughter Mimi shares her thoughts with you on "Why Moms Deserve to Sleep In and Have Breakfast in Bed." To all you moms out there, I hope you are encouraged by her writing. Happy Mother's Day!
Why Moms Deserve To Sleep In and Have Breakfast in Bed
by Mimi Currah (age 12)
All moms deserve a day off every once in a while, but especially on Mother's Day. I believe they deserve to have a perfect morning which definitely includes sleeping in and enjoying breakfast in bed. One reason moms deserve this is because they are hard workers. Whether they are working, cooking dinner, or taking care of us, they often give 110% of themselves. This often affects the people around them, inspiring them to raise their level of effort and try harder in the things they do. I know when I see my mom work hard it makes me have fire in the belly to want to match it. She works hard so her ceiling can be my floor. And I think that's just amazing.
Another reason moms deserve a perfect morning is because they are sacrificial. They often give up much of their time supporting us kids and shuttling us to sports practices, activities, and school events. Lastly, moms are considerate. They often search for opportunities to help others. Moms will often help people going through a hard time, mourning a loss, or those trying to do a two-person job all by themselves. Sacrificial moms will always be there for people. Whenever a kid needs someone to lean on, kids can count on their mom. I hope all moms get a day off this Mother's Day from sunrise to sunset. If you are a mom, us kids appreciate you even if we don't always show it.
Happy Mother's Day! Thanks for reading.
