When Albert Einstein coined the definition of insanity as doing the same thing over and over again and expecting different results, he might have been referring to the challenges of feeding his kids. I feel like I'm going insane when I try to introduce a variety of great foods to them, but they want the same predictable things over and over.
Okay, maybe Einstein didn't struggle with picky eaters, but I sure do. A great hope I have for my children is that they will become lovers of a wide variety of foods. Even though they are constantly encouraged to try a plethora of foods, the foodie in me dies a little when their preference is to eat as plain and simple as they possibly can. This is especially true with kid-favorite foods like hamburgers and pizza. I can't stop from suggesting a variety of toppings, or combinations of toppings, even though I already know the answer: no thanks, just cheese, please. But their consistent answer does not deter me from always asking anyway yes, I am insane.
However, I have had some minor breakthroughs recently. My youngest daughter Mimi recently started adding olives and sausage to her pizza. Abbi has recently discovered the joy of adding bacon, and Eli well, he's sticking to cheese only. If I have any chance to get one of my kids to experiment beyond the common toppings, it will be with Mimi. She will try anything once.
Today I have an exciting Thai Shrimp Pizza recipe for you that won Mimi over and that my husband loved too. Made with a peanut sauce base and topped with shrimp, bean sprouts, carrots, and cilantro, this pizza is really good. The flavor and texture profile is what makes this pizza special everything coming together perfectly for the glory of each bite. We parents go insane each day trying to guide our kids the best we can hoping one of these days they will surprise us with a different result. I'm learning that in order to help my kids become more adventurous with their palates it takes a lot of patience and a little bit of insanity too. And once in a while, it pays off, which makes it all worth it.
