Ingredients

  • 1 1/2 cups cold cooked spaghetti or other noodles
  • 4 tablespoons sesame oil divided
  • 1 cucumber
  • 1 carrot
  • 3 tablespoons red wine vinegar
  • 2 tablespoons soy sauce
  • 2 teaspoons granulated sugar
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Check with a grownup, and wash your hands before you begin.
  2. Use leftover noodles, or have a grownup cook them for you. Make sure they're room temperature or cold. If they're sticky, toss them with 1 tablespoon of sesame oil.
  3. Peel the cucumber and the carrot, then shave off thin strips with the peeler. (If you want to make smaller strips, use a safe knife -- like a silverware knife, or a butter knife -- to cut them more.)
  4. To prepare the sauce, take a bowl and mix together the remaining sesame oil, vinegar, soy sauce, and sugar.
  5. Pour the sauce over the noodles and sprinkle with toasted sesame seeds. Spread the cucumber and carrot strips on top.
  6. Clean up the kitchen and dig in! To really enjoy the noodles, eat them with chopsticks! Or you can use a fork (I think it's easier).
