Ingredients
- One pint of mixed pitted olives
- 1 3 pound package of bonless skin on chicken thighs
- Marinara Sauce
- pasta - any kind
- Olive oil
- onion
- garlic
- nutmeg
- splash of congac
Directions
- Dice onion roughly
- Mince garlic
- In a large, deep skillet sautee onion and garlic in a little olive oil til transparent and fragrant
- Brown thighs skin side down first until just past golden
- Flip to skin side up, add olives
- Cover with sauce and season to taste with salt, pepper and a small amount of nutmeg... smoosh around to mix and keep chicken covered
- Simmer on low until chicken is cooked through
- Serve with pasta of your choice, crusty bread, and a salad
