    Ingredients

  • One pint of mixed pitted olives
  • 1 3 pound package of bonless skin on chicken thighs
  • Marinara Sauce
  • pasta - any kind
  • Olive oil
  • onion
  • garlic
  • nutmeg
  • splash of congac

    Directions

  1. Dice onion roughly
  2. Mince garlic
  3. In a large, deep skillet sautee onion and garlic in a little olive oil til transparent and fragrant
  4. Brown thighs skin side down first until just past golden
  5. Flip to skin side up, add olives
  6. Cover with sauce and season to taste with salt, pepper and a small amount of nutmeg... smoosh around to mix and keep chicken covered
  7. Simmer on low until chicken is cooked through
  8. Serve with pasta of your choice, crusty bread, and a salad
