Parmesan Potato Puffs

    Ingredients

  • 1/3 cup instant nonfat dry milk powder
  • 1/4 cup water
  • 3 cups unseasoned mashed potatoes
  • (4 to 5 medium potatoes)
  • 1 egg beaten
  • 1 teaspoon each salt and baking powder
  • 1/8 teaspoon pepper
  • 1/4 cup finely chopped onion
  • 2 TBS chopped parsley
  • 1 cup grated parmesan cheese
  • 1/2 cup chopped toasted almonds
  • Paprika

    Directions

  1. Preheat oven to 350°.
  2. In a large bowl, thoroughly mix dry milk powder and water. Add potatoes, egg, salt, baking powder, pepper, onion, parsley and 1/2 cup of the cheese. Mix thoroughly.
  3. Form mixture into 6 balls. On a plate, mix remaining cheese with almonds. Roll each ball in almond mixture to coat. Place on buttered baking dish. Bake at 350° for 30 to 35 minutes until puffed and lightly browned. Dust with paprika.
