- 2 cups grated zucchini
- 1/2 cup grated romano cheese
- 1/2 cup freshly chopped parsley
- 2 eggs beaten
- 1 teaspoon salt
- Dash of pepper
- 3/4 to 1 c flour
- 1 teaspoon oil
Ingredients
- Mix all ingredients except flour and oil. Then gradually add flour and finally oil.
- Drop by teaspoonful into preheated pan with vegetable or olive oil. Lightly fry on both sides until golden brown.
