Quick and Easy Pico De Gallo

When friends offer to give you sun-ripe tomatoes from their garden, the best thing to do is to accept them graciously and enjoy every bite. The difference between a store-bought tomato picked before its peak and one picked off the vine it its prime is like the difference between night and day. I wish all tomatoes tasted as good as fresh garden tomatoes, there is just no comparison. Aside from my container herb garden I do not grow my own fruits and vegetables during the spring and summer.
However, I do have several friends who do and I am very appreciative when they share their harvest with me. They are special, and I want to do something special with them. Although a good tomato can be enjoyed on its own I love making Pico de Gallo, also known as salsa fresca, which is an uncooked salad made from diced tomatoes, onions, serrano chiles (jalapeno makes a great substitute), cilantro, salt, and fresh squeezed lime juice.
Today I'm sharing an easy recipe for Pico de Gallo with you. It's nearly impossible to go wrong with sun-ripe tomatoes from the garden and this recipe. My favorite way to serve this salsa is either alongside fresh made guacamole and corn tortilla chips or on top of tacos. It is also great for using as a condiment on top of eggs for breakfast or a nice grilled steak. Enjoy!
