Sesame Scallion Soba Noodles

Soba noodles are made from buckwheat flour and have a subtle nutty flavor to them. High in manganese (426 mg a cup) and only 113 calories per cup, they are a great alternative to white pasta. They can be cooked into soups, or cooked plain with a side of dipping sauce. They also make a great vegetarian noodle salad, which is what I am sharing with you today. Sesame Scallion Soba noodles make a nice light cold dinner entrée that is perfect on warm summer nights when you're looking for a family dinner option to beat the heat. The noodles are boiled to al dente and the sauce is prepared in a food process or blender.
When tossed together and allowed to cool in the refrigerator the noodle salad will soak up all the flavors of sesame and soy, which make the perfect flavor combo for the soba. The sesame seeds, cilantro, and scallions offer a bit of texture and additional layers of flavor that assure this noodle dish is anything but boring. In fact, these additional ingredients elevate the noodles into a satisfying meal. The noodles are best if made the night before so they have plenty of time to soak up the sauce. Just take the noodles out of the fridge the next day and dinner is ready. Enjoy!
