Sesame Ginger Asian Salad

I'm really excited to be sharing one of my easy go-to salads with you. My Sesame Ginger Salad is one of those recipes you may be familiar with from dining out at various restaurants; there are versions of this salad on many menus. The dressing is made from bold familiar Asian ingredients like sesame, ginger, soy sauce, and rice vinegar. The little added sugar helps cut the acidity and spiciness (from the ginger).
You can easily cook chicken for this salad or you can do as I do and quickly buy a cooked rotisserie chicken from the store, then pull and chop the meat. Buying rotisserie chicken is a great time-saving tip for many recipes that call for chicken, especially for salads and soups. Personally, I like to start tossing my salad with a couple of tablespoons of dressing at a time, adding a little more to taste if necessary. Any leftover dressing can be stored in the refrigerator to be used later. My junior high daughter will often pack her lunch with a small container of leftover dressing to use as dipping sauce for fresh-cut vegetables like cucumbers, carrots, and celery. I've discovered a little dressing often goes a long way.
