Ingredients

  • ½ cup of arrowroot starch
  • 2 tablespoons coconut oil
  • ¼ cup of brown sugar
  • 1 tablespoon sesame seeds
  • Canola oil for frying
  • 3 large taro roots, peeled and sliced into 2-inch pieces
  • Water, enough to cover sliced taro

Instructions

  1. In a large saucepan over high heat, add cut taro and cover with water.
  2. Bring to a boil and allow pieces to soften 15-20 minutes. Next, drain water and add soft taro into a bowl.
  3. Mash taro until smooth and add arrowroot starch, coconut oil, and brown sugar. Mix well to form dough.
  4. Roll into balls (about 1-inch diameter) and cover with sesame seeds on all sides.
  5. Add cooking oil to a deep fryer or deep pot. Heat to 350 degrees.
  6. Deep fry in batches over medium heat for about 3 minutes until lightly brown.
  7. Remove and put onto a metal rack with a tray below to catch excess oil.
  8. Serve hot.
