How can something so small be so intimidating?
The macaron, light and airy, adorably round and dyed a pretty pastel shade, is hardly frightening on the surface. But face-to-face with it, it scared the pants off me. These little pastries look like perfect little packages, sometimes too perfect to be made at home. But, it turns out, they're quite simple to make. Yes, there is some precision needed, but overall it's just about following directions. And what you get at the end is a pretty little cookie, soft on the inside, with the thinnest of crisp outer shells. Filled with an intense clementine-scented, dark chocolate ganache, they're a lovely combination of crunchy and smooth, rich and bright.
